• 2 Tbsp. olive or coconut oil
  • 3 cups Chopped onion
  • 1 Red pepper, chopped
  • 1-14oz. Canned kidney beans, drained
  • 1-14oz. Canned pinto beans, drained
  • 1-14oz. Canned black beans or chickpeas
  • 1-14oz. Canned stewed tomatoes
  • 1-14oz. Canned tomato sauce
  • 2-3 Tbsp maple syrup
  • 2 tbsp Chili powder
  • 2 cups sliced mushrooms
  • ½ tsp. Garlic powder
  • Sea Salt and pepper

 

  1. Heat cooking oil in a frying pan.
  2. Add onion, peppers, and mushrooms.
  3. Saute until onion is soft.  Add remaining ingredients.
  4. Heat, stirring often until mixture starts to boil.
  5. Boil slowly, uncovered, for 5 to 10 minutes, stirring occasionally.
  6. Add other veggies if desired.
