- 2 Tbsp. olive or coconut oil
- 3 cups Chopped onion
- 1 Red pepper, chopped
- 1-14oz. Canned kidney beans, drained
- 1-14oz. Canned pinto beans, drained
- 1-14oz. Canned black beans or chickpeas
- 1-14oz. Canned stewed tomatoes
- 1-14oz. Canned tomato sauce
- 2-3 Tbsp maple syrup
- 2 tbsp Chili powder
- 2 cups sliced mushrooms
- ½ tsp. Garlic powder
- Sea Salt and pepper
- Heat cooking oil in a frying pan.
- Add onion, peppers, and mushrooms.
- Saute until onion is soft. Add remaining ingredients.
- Heat, stirring often until mixture starts to boil.
- Boil slowly, uncovered, for 5 to 10 minutes, stirring occasionally.
- Add other veggies if desired.
