- 6 cups mixed, chopped veggies (parsnips, turnip, beets, cauliflower, broccoli, squash)
- Place on a parchment or silicone lined baking sheet.
- Drizzle with avocado oil and toss. Add spices (we add herbamare and basil).
- Bake about 25 minutes at 375 degrees, tossing every 10 minutes or so.
- The larger the pieces, the longer it will need to cook.
Use as a side or on a rice bowl or in a salad. So many options!
