• 6 cups mixed, chopped veggies (parsnips, turnip, beets, cauliflower, broccoli, squash)

 

  1. Place on a parchment or silicone lined baking sheet.
  2. Drizzle with avocado oil and toss. Add spices (we add herbamare and basil).
  3. Bake about 25 minutes at 375 degrees, tossing every 10 minutes or so.
  4. The larger the pieces, the longer it will need to cook.

    Use as a side or on a rice bowl or in a salad. So many options!
