- 2 ½ cups large flake rolled oats or quinoa flakes
- ¾ cup pumpkin seeds
- ¾ cup sunflower seeds
- 1/3 cup sesame seeds
- ¾ cup uncooked quinoa
- ¼ cup unsweetened, flaked coconut
- 1 cup maple syrup (or less, I found it quite sweet)
- 1 tsp pure vanilla extract
- 2 tsp ground cinnamon
- 1/3 cup dried fruit
- 1/3 cup raisins
- Measure dry ingredients together in a large bowl.
- Combine maple syrup and vanilla and add to dry ingredients.
- Sprinkle cinnamon over and mix well.
- Spread evenly on a baking sheet and bake at 225oF for 1 hour.
- Remove and set aside to cool.
- Toss with dried fruit and raisins.
- Store in a sealed container for up to 4 weeks.
