- 2 cups quinoa, cooked and cooled
- 2 cups cucumber, chopped peeled and seeded
- ¼ cup scallion, sliced both white and green parts
- ¼ cup cilantro leaves, chopped
- 2 – 3 tbsp extra-virgin olive oil
- 2 tbsp lime or lemon juice, fresh squeezed (or cider or balsamic vinegar)
- 1/8 tsp sea salt or Herbamare
- 1/8 tsp Cayenne (optional)
- In a medium-size bowl, toss together the quinoa, cucumber and scallion.
- Place cilantro, oil, lime or lemon juice, salt, and cayenne in a bowl and whisk together.
- Pour dressing over salad and toss until well combined.
