- 1 cup rolled oats
- 1 cup hot water
- ½ cup maple syrup
- ¼ tsp. sea salt
- 1 mashed banana
- 1 cup oat flour
- ¼ tsp baking soda
- 3 tsp. baking powder
- Preheat oven to 350o. Grease a 9 x5 loaf pan. Mix the rolled oats with the hot water. Let stand for 5 minutes.
- Stir in the maple syrup, salt and banana.
- Add the flour, baking soda, and baking powder and stir until all the ingredients are just mixed. Do not overmix.
- Turn into the loaf pan and let stand for 20 minutes in a warm place.
- Bake 45 minutes.
- Substitutes: Add 2 eggs in place of mashed bananas. Add ½ cup chopped nuts or raisins.
