• 1 cup rolled oats
  • 1 cup hot water
  • ½ cup maple syrup
  • ¼ tsp. sea salt
  • 1 mashed banana
  • 1 cup oat flour
  • ¼ tsp baking soda
  • 3 tsp. baking powder
  1. Preheat oven to 350o. Grease a 9 x5 loaf pan. Mix the rolled oats with the hot water. Let stand for 5 minutes.
  2. Stir in the maple syrup, salt and banana.
  3. Add the flour, baking soda, and baking powder and stir until all the ingredients are just mixed. Do not overmix.
  4. Turn into the loaf pan and let stand for 20 minutes in a warm place.
  5. Bake 45 minutes.
  6. Substitutes: Add 2 eggs in place of mashed bananas. Add ½ cup chopped nuts or raisins.
