Serves 4
- 4/ 6 oz salmon fillets
- 2 Tbsp extra virgin olive oil
- 3 Tbsp balsamic vinegar
- 1 red pepper, cut into 1/3 “ strips
- 3 med tomatoes cut into 1/3 “ strips
- 1 med red onion, cut into 1/3” strips
- ½ cup chopped fresh basil freshly ground pepper
- Prepare barbecue racks by brushing with olive oil.
- Preheat the barbecue.
- In a dish, combine 1 Tbsp olive oil and balsamic vinegar add salmon fillets and coat with mixture.
- Sprinkle with ground pepper and marinade for 10-15 minutes.
- Place vegetables on a platter and brush lightly with olive oil.
- Place on grill oil side down.
- Grill for 3-4 minutes or until you can see grill marks
- Turn over and grill other side for 3-4 minutes.
- Remove vegetables from grill place in a bowl and add remaining Tbsp of olive oil and 2 Tbsp of balsamic vinegar and chopped basil.
- Toss to coat taking care to separate onions into single rings.
- Place salmon skin side up on barbecue racks.
- Grill for 3-4 minutes turn salmon and grill for another 3-4 minutes or until cooked through.
- Serve vegetables topped with salmon.
