It can be hard to eat salad in the winter time. I like to add cooked, roasted veggies to mine. Try using warming spices in your dressings.
- 3 tablespoons avocado or olive oil
- 1 to 2 tablespoons of fresh lemon juice
- 1 tsp of freshly grated ginger
- 1 garlic clove minced
- Whisk the ingredients together and store in a dark bottle in the refrigerator. Great as a light dressing over lettuce, grains, vegetables, etc.
