Serves 4

  • 4/ 6 oz salmon fillets
  • 2 Tbsp extra virgin olive oil
  • 3 Tbsp balsamic vinegar
  • 1 red pepper, cut into 1/3 “ strips
  • 3 med tomatoes cut into 1/3 “ strips
  • 1 med red onion, cut into 1/3” strips
  • ½ cup chopped fresh basil freshly ground pepper
  1. Prepare barbecue racks by brushing with olive oil.
  2. Preheat the barbecue.
  3. In a dish, combine 1 Tbsp olive oil and balsamic vinegar add salmon fillets and coat with mixture.
  4. Sprinkle with ground pepper and marinade for 10-15 minutes.
  5. Place vegetables on a platter and brush lightly with olive oil.
  6. Place on grill oil side down.
  7. Grill for 3-4 minutes or until you can see grill marks
  8. Turn over and grill other side for 3-4 minutes.
  9. Remove vegetables from grill place in a bowl and add remaining Tbsp of olive oil and 2 Tbsp of balsamic vinegar and chopped basil.
  10. Toss to coat taking care to separate onions into single rings.
  11. Place salmon skin side up on barbecue racks.
  12. Grill for 3-4 minutes turn salmon and grill for another 3-4 minutes or until cooked through.
  13. Serve vegetables topped with salmon.
